As we only use energy from the sun and wind to dry our salt, it retains all its natural minerals to give a robust, distinctive flavour without the bitter metallic aftertaste found in more refined salts. Letting nature take its course, we don’t use artificial heat or any chemical additives, resulting in a process that’s completely organic and fully sustainable.</image:caption>

      <image:caption>Boasting one of the highest tidal ranges in the world, the waters surrounding the Channel Islands are renowned for being some of the cleanest in Europe. Collected off the wild Sark coastline, the seawater passes through our double filtration system to remove any natural impurities, before being stored in our salt house ready for the evaporation process.</image:caption>

      <image:caption>From sea to salt, we harvest everything completely by hand. Due to our traditional techniques, our salt has comparatively large flakes that burst with raw flavours of the sea. Its rich minerality means you can use around forty percent less than other sea salts to deliver the same level of saltiness and flavour. As we physically sort and sieve our salt, every batch is unique. However, we like to think of these flake inconsistencies as proof of authenticity. Whilst it may be a slower production process, we believe the quality speaks and tastes for itself.</image:caption>
